How To Cook in Bulk  -

16th July 2018

It’s no surprise that many restaurants or eateries cook in large batches – chefs and kitchen staff need to cater for large groups of people, as well as make sure that everything prepared is cooked to perfection and meets the highest of standards. There are many benefits of bulk cooking, not least that it saves time during particularly busy periods or seasons throughout the year. As food importers in Malta, we at Hi Trading know quite a bit about this method of meal preparation. Have a look at some tips from restaurants as to how to cook in bulk.

Make a Plan Ahead of Time

Write out a list of enough grocery supplies to last about 5 days. It will save you from arriving at the supermarket and panicking that you might have forgotten something important. Try to do a stock take of your pantry and check which herbs, oils or condiments you might need.

Use Kitchen Appliances to Your Advantage

Nobody fancies chopping five heads of garlic along with eight onions when cooking in batch. A food processor saves time and hassle (not to mention, it’s much kinder to your eyes!) High-speed blenders are also super useful when baking, as opposed to spoons or whisks.

Store Food in the Right Containers

If you plan on freezing food that can later be re-heated, choose containers in which meals can thaw and which are safe for the oven or microwave. Make sure they are cleaned properly to avoid any possible contamination.

Be Careful When Doubling Ingredients

It goes without saying that batch cooking means doubling or tripling quantities and measurements when following recipes. However, be attentive when dealing with spices and certain condiments. Red chili flakes, for example, vary in reactions according to quantities; this means that one tablespoon shouldn’t necessary become three. Taste the mixture while adding extra quantities in order to ensure that the flavours don’t become too overpowering and ruin the recipe as a result.

“Bloom” Dishes Before Adding Any Spices

This is a good solution to prevent the above problem from occurring in the first place – it also softens the raw texture that certain herbs can have, along with bringing out their flavour in a more understated yet effective way. To bloom a frying pan or a pot, pour a small amount of oil and cook the ingredients until fragrant, after which you can add them to your meal.
